Ingredients

  • 1 small spaghetti squash

  • 6-8 medium shrimp, peeled and deveined

  • 2 cloves of garlic, minced

  • 1 tablespoon olive oil

  • 1 tablespoon fresh parsley, chopped

  • Salt and pepper to taste

Directions

  1. Preheat your oven to 400°F (200°C).

  2. Cut the spaghetti squash in half lengthwise and remove the seeds.

  3. Place the spaghetti squash halves on a baking sheet, cut side up. Drizzle with half of the olive oil and season with salt and pepper.

  4. Roast the spaghetti squash in the preheated oven for about 40-45 minutes, or until the flesh is tender and easily shreds into strands with a fork. Once cooked, remove from the oven and set aside.

  5. While the spaghetti squash is roasting, heat the remaining olive oil in a skillet over medium heat.

  6. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.

  7. Add the shrimp to the skillet and cook for about 2-3 minutes per side, until they turn pink and opaque.

  8. Once the shrimp are cooked, remove them from the skillet and set aside.

  9. Using a fork, scrape the flesh of the roasted spaghetti squash to create spaghetti-like strands. Place the strands in the skillet with the garlic and toss them to coat with the garlic oil.

  10. Add the cooked shrimp back to the skillet with the spaghetti squash. Toss everything together to combine and heat through.

  11. Remove from heat and garnish with fresh parsley.

  12. Serve immediately and enjoy!
