1 lb raw shrimp
1 yellow onion, sliced
1 large head green cabbage, shredded
1/2 large turnip, shredded
4 cups fresh green beans
1 tbsp + 2 tsp olive oil
Olive oil cooking spray
1/4 cup + 1 tsp pure balsamic vinegar
1 tsp coarse ground pepper
2 tbsp minced garlic
2 tsp cumin
2 tsp onion powder
Directions
Prepare the Green Beans:
Trim the ends of the green beans.
In a pot of boiling salted water, blanch the green beans for about 3-4 minutes, until they are bright green and crisp-tender.
Drain the beans and set them aside.
Make the Warm Slaw:
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the sliced onion and sauté until it becomes translucent and slightly caramelized, about 5 minutes.
Stir in the shredded cabbage and shredded turnip.
Cook for about 5-7 minutes, stirring occasionally, until the cabbage has wilted but still retains some crunch.
Season with salt and pepper to taste.
Remove the warm slaw from the skillet and set it aside.
Cook the Shrimp:
In the same skillet, heat 2 teaspoons of olive oil over medium heat.
Add the minced garlic and cook for about 1-2 minutes until fragrant.
Add the shrimp and season with cumin, onion powder, coarse ground pepper, and salt to taste.
Cook the shrimp for about 2-3 minutes per side until they turn pink and opaque.
Remove the shrimp from the skillet and set them aside.
Prepare the Balsamic Glaze:
In a small saucepan, combine 1/4 cup of balsamic vinegar and 1 teaspoon of olive oil.
Bring the mixture to a gentle simmer over low heat.
Cook for about 3-4 minutes, stirring occasionally, until the vinegar thickens and reduces slightly.
Remove the balsamic glaze from heat and set it aside.
Assemble the Dish:
On a serving plate, arrange the warm slaw, cooked shrimp, and blanched green beans.
Drizzle the balsamic glaze over the shrimp and slaw.
