Ingredients

  • 1 lb raw shrimp

  • 1 yellow onion, sliced

  • 1 large head green cabbage, shredded

  • 1/2 large turnip, shredded

  • 4 cups fresh green beans

  • 1 tbsp + 2 tsp olive oil

  • Olive oil cooking spray

  • 1/4 cup + 1 tsp pure balsamic vinegar

  • 1 tsp coarse ground pepper

  • 2 tbsp minced garlic

  • 2 tsp cumin

  • 2 tsp onion powder

Directions

  1. Prepare the Green Beans:



    • Trim the ends of the green beans.

    • In a pot of boiling salted water, blanch the green beans for about 3-4 minutes, until they are bright green and crisp-tender.

    • Drain the beans and set them aside.


  2. Make the Warm Slaw:



    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.

    • Add the sliced onion and sauté until it becomes translucent and slightly caramelized, about 5 minutes.

    • Stir in the shredded cabbage and shredded turnip.

    • Cook for about 5-7 minutes, stirring occasionally, until the cabbage has wilted but still retains some crunch.

    • Season with salt and pepper to taste.

    • Remove the warm slaw from the skillet and set it aside.


  3. Cook the Shrimp:



    • In the same skillet, heat 2 teaspoons of olive oil over medium heat.

    • Add the minced garlic and cook for about 1-2 minutes until fragrant.

    • Add the shrimp and season with cumin, onion powder, coarse ground pepper, and salt to taste.

    • Cook the shrimp for about 2-3 minutes per side until they turn pink and opaque.

    • Remove the shrimp from the skillet and set them aside.


  4. Prepare the Balsamic Glaze:



    • In a small saucepan, combine 1/4 cup of balsamic vinegar and 1 teaspoon of olive oil.

    • Bring the mixture to a gentle simmer over low heat.

    • Cook for about 3-4 minutes, stirring occasionally, until the vinegar thickens and reduces slightly.

    • Remove the balsamic glaze from heat and set it aside.


  5. Assemble the Dish:



    • On a serving plate, arrange the warm slaw, cooked shrimp, and blanched green beans.

    • Drizzle the balsamic glaze over the shrimp and slaw.

    • Optional: You can also garnish the dish with additional minced garlic and a sprinkle of cumin if desired.
