Ingredients

  • ½ head cauliflower, cut into florets

  • 2 egg whites

  • 1 clove garlic, minced

  • ¾ tsp dried herbs (basil, oregano, thyme)

  • ¼ tsp sea salt

Directions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Place the cauliflower florets in a food processor and pulse until they resemble rice-like grains. Be careful not to overprocess it into a puree.

  3. Transfer the processed cauliflower to a microwave-safe bowl and microwave for 4-5 minutes, or until tender. Allow it to cool for a few minutes.

  4. Using a clean kitchen towel or cheesecloth, squeeze out any excess moisture from the cauliflower. This step is important to ensure the wraps hold together properly.

  5. In a mixing bowl, combine the cauliflower, minced garlic, dried herbs, and sea salt. Mix well to incorporate all the ingredients.

  6. In a separate bowl, whisk the egg whites until frothy. Add the frothy egg whites to the cauliflower mixture and stir until everything is well combined.

  7. Divide the mixture into four portions. Place each portion onto the prepared baking sheet and flatten it into a thin, round shape using the back of a spoon or your hands.

  8. Bake the cauliflower wraps in the preheated oven for about 15-20 minutes, or until they become golden brown and slightly crispy around the edges.

  9. Once cooked, remove the wraps from the oven and allow them to cool slightly before using them.
