Ingredients

  • 2 cloves garlic, minced

  • 2 small zucchini, diced

  • 2 cups cabbage, shredded

  • 2 cups cauliflower

  • 2 cups broccoli

  • 1 medium onion, diced

  • 1 medium red pepper, diced

  • 1 rib of celery, diced

  • 2 tsp fresh thyme, chopped

  • 6 cups organic, no salt vegetable or homemade broth

  • 2 tbsp fresh parsley, chopped

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • 2 tbsp fresh lemon juice

Directions

  1. Heat a large pot over medium heat. Add a little oil or vegetable broth and sauté the minced garlic until fragrant.

  2. Add the diced onion, red pepper, and celery to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables have softened.

  3. Add the zucchini, cabbage, cauliflower, and broccoli to the pot. Stir well to combine with the other vegetables.

  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for about 15-20 minutes until the vegetables are tender.

  5. Stir in the fresh thyme, chopped parsley, sea salt, and black pepper. Allow the soup to simmer for an additional 5 minutes to let the flavors meld together.

  6. Remove the pot from heat and stir in the fresh lemon juice.

  7. Taste the soup and adjust the seasoning if needed.

  8. Ladle the Fresh Vegetable Soup into a bowl and serve hot.
