4 oz beef or chicken, cut into thin strips
1 ½ cups bell peppers, sliced (use different colors for visual appeal)
1 onion, sliced
2 cloves of garlic, minced
2 tbsp olive oil
2 tbsp lime juice
1 tsp ground cumin
1 tsp smoked paprika
1 tsp chili powder
Salt and pepper, to taste
Leaf lettuce or low-carb tortillas, for serving
Directions
In a small bowl, combine the lime juice, ground cumin, smoked paprika, chili powder, minced garlic, salt, and pepper. Mix well to create a marinade.
Place the beef or chicken strips in a shallow dish or a zip-top bag. Pour the marinade over the meat, ensuring all the strips are coated. Allow it to marinate for at least 15-20 minutes (or longer if you have time) in the refrigerator.
In a large skillet or pan, heat the olive oil over medium-high heat.
Add the sliced onions to the pan and sauté them for 2-3 minutes until they become translucent and slightly caramelized.
Next, add the bell peppers to the pan and continue to cook for another 3-4 minutes until they start to soften but still maintain a slight crunch.
Remove the vegetables from the pan and set them aside on a plate.
In the same pan, add the marinated beef or chicken strips and cook them for 3-4 minutes until they are browned and cooked through.
Once the meat is cooked, return the sautéed onions and bell peppers to the pan. Stir everything together to combine and heat it all through for another 1-2 minutes.
Taste and adjust the seasoning with salt and pepper if needed.
