Ingredients

  • 8 large egg whites

  • 2 cups fresh spinach, roughly chopped

  • 1/2 cup turkey bacon bits

  • 1 small onion, finely chopped

  • 1 garlic clove, minced

  • 1/4 teaspoon chili flakes (optional)

Directions

  1. Heat a non-stick pan over medium heat and add the olive oil. Once hot, add the finely chopped onion and sauté until it turns translucent.

  2. Add the minced garlic to the pan and cook for another 30 seconds until fragrant.

  3. Add the turkey bacon bits to the pan, stirring occasionally until they turn crispy.

  4. Toss in the spinach, stirring it into the mixture until it wilts.

  5. Meanwhile, in a bowl, whisk the egg whites until slightly frothy. Season with salt, pepper, and chili flakes if using.

  6. Pour the whisked egg whites over the spinach and bacon mixture. Let it cook undisturbed for 1-2 minutes until it starts to set around the edges.

  7. Stir the egg whites gently, ensuring the uncooked portion flows underneath until it's fully cooked.

  8. Once the egg whites are cooked to your desired consistency, remove the pan from the heat.
