Ingredients

  • 2 large eggs

  • 2 cups mixed lettuce greens (such as romaine, arugula, or spinach)

  • 2 turkey sausages (check for low-carb options or make your own)

  • 1/4 cup cherry tomatoes, halved

  • 1/4 cup cucumber, diced

  • 2 tablespoons red onion, thinly sliced

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon apple cider vinegar

Directions

  1. Hard-boil the eggs: Place the eggs in a saucepan and cover with water. Bring the water to a boil, then reduce the heat and simmer for 8-10 minutes. Drain the hot water and transfer the eggs to a bowl filled with ice water. Let them cool for a few minutes, then peel and chop the eggs into quarters.

  2. Cook the turkey sausages: Heat a non-stick skillet over medium heat. Remove the casings from the turkey sausages and crumble the meat into the skillet. Cook for about 5-7 minutes, or until the sausages are browned and cooked through. Remove from heat and set aside.
