Ingredients

  • 4 cups organic chicken or vegetable broth

  • 1 tsp coconut aminos

  • 1 tsp rice vinegar

  • 1/2 tsp stevia

  • 2 eggs, lightly beaten

  • 1 green onion, thinly sliced

  • 1/4 tsp ground ginger

  • 1/4 tsp garlic powder

  • Salt and black pepper to taste

  • 1 tbsp chopped fresh cilantro (optional)

Directions

  1. In a saucepan, bring the organic chicken or vegetable broth to a boil over medium heat.

  2. Stir in the coconut aminos, rice vinegar, stevia, ground ginger, and garlic powder. Allow the mixture to simmer for about 2 minutes to let the flavors combine.

  3. While the broth is simmering, lightly beat the eggs in a separate bowl.

  4. Once the broth is simmering, use a spoon to stir the broth in a circular motion. This will create a gentle whirlpool effect.

  5. Slowly pour the beaten eggs into the swirling broth in a steady stream. The eggs will cook and form thin ribbons.

  6. Add salt and black pepper to taste. Remember to taste the broth before adding salt, as the chicken or vegetable broth may already contain salt.

  7. Add the thinly sliced green onion to the soup and stir gently.

  8. Remove the soup from heat and ladle it into a serving bowl.

  9. Sprinkle the chopped fresh cilantro on top (optional) for added flavor and garnish.

  10. Your Egg Drop Soup is now ready to be enjoyed! Serve it hot and savor the comforting flavors.
