1 cup fresh-cut okra
1 tomato, diced
1/6 of a large onion, chopped
1 clove of garlic, minced
1/6 tablespoon of olive oil
1/6 teaspoon of smoked paprika
1/12 teaspoon of dried thyme
1/12 teaspoon of dried oregano
A pinch (1/24 teaspoon) of cayenne pepper (optional)
Salt and black pepper, to taste
Chopped fresh parsley, for garnish
Directions
Heat the olive oil in a small saucepan over medium heat.
Add the chopped onion and minced garlic to the saucepan. Sauté until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.
Add the diced tomato to the saucepan and cook for an additional 2 minutes, allowing the tomato to soften slightly.
Add the fresh-cut okra to the saucepan and stir well to combine with the other ingredients.
Sprinkle the smoked paprika, dried thyme, dried oregano, cayenne pepper (if using), salt, and black pepper over the okra mixture. Stir to evenly distribute the seasonings.
Reduce the heat to low, cover the saucepan, and let the okra and tomatoes stew for about 15-20 minutes, or until the okra is tender.
Taste and adjust the seasoning if needed, adding more salt or pepper according to your preference.
Once the okra is cooked to your desired tenderness, remove the saucepan from heat.
