Ingredients

  • 4 large eggs

  • 1 cup fresh spinach, chopped

  • 1/2 cup low-fat cottage cheese

  • 1/2 cup low-fat shredded cheddar cheese

  • 1/4 cup almond milk (unsweetened)

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

Directions

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a small baking dish or two individual ramekins with cooking spray.

  3. In a mixing bowl, whisk together the eggs, almond milk, salt, black pepper, garlic powder, and onion powder until well combined.

  4. Add the chopped spinach, cottage cheese, and shredded cheddar cheese to the bowl. Stir until all the ingredients are evenly distributed.

  5. Pour the mixture into the prepared baking dish or ramekins.

  6. Place the baking dish or ramekins in the preheated oven and bake for about 25-30 minutes or until the quiche is set and the top is golden brown.

  7. Once cooked, remove from the oven and let it cool for a few minutes before serving.

  8. Cut the quiche into individual slices and serve hot.
