6 egg whites
½ onion, minced
1 cup chopped broccoli, cooked
1 cup fresh spinach
1 cup unsweetened almond milk
1 tbsp mustard powder
¼ tsp sea salt
1/8 tsp black pepper

Directions
Preheat your oven to 350°F (175°C).
In a medium-sized bowl, whisk the egg whites until they are well combined and slightly frothy.
Heat a non-stick skillet over medium heat and lightly spray it with olive oil cooking spray.
Add the minced onion to the skillet and sauté until it becomes translucent and fragrant.
Stir in the chopped broccoli and fresh spinach, and cook for another 2-3 minutes until the spinach wilts slightly.
Remove the skillet from heat and set it aside to cool for a few minutes.
In a separate bowl, combine the almond milk, mustard powder, sea salt, and black pepper. Whisk until the ingredients are well incorporated.
Add the sautéed vegetables to the egg whites and mix them together.
Pour the almond milk mixture into the egg and vegetable mixture. Stir until all the ingredients are evenly combined.
