4 ounces (115g) lump crab meat, drained and picked for shells
1/4 cup diced cucumber
1/4 cup diced bell pepper (any color)
1/4 cup diced celery
2 tablespoons diced red onion
1 tablespoon fresh lemon juice
1 tablespoon mayonnaise (look for a low-sugar or sugar-free option)
1/2 teaspoon Dijon mustard
Salt and pepper to taste
4 large lettuce leaves (such as butter lettuce or romaine)
