Ingredients

  • 4 oz lump crab meat

  • 1 tbsp unsalted butter

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 1 celery stalk, finely chopped

  • 1 carrot, peeled and finely chopped

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1/2 tsp ground cumin

  • 1/4 tsp cayenne pepper

  • 1 bay leaf

  • 2 cups unsweetened almond milk

  • 1 cup seafood or chicken broth

  • Sea salt and black pepper, to taste

  • Fresh parsley, chopped for garnish

Directions

  1. In a large saucepan, melt the butter and olive oil over medium heat. Add the onion, celery, and carrot, and cook until the vegetables are soft about 5-7 minutes.

  2. Add the garlic, paprika, thyme, oregano, cumin, and cayenne pepper. Cook for another 2 minutes, stirring frequently.

  3. Add the bay leaf, almond milk, and broth to the saucepan. Bring to a simmer and cook for 10 minutes, stirring occasionally.

  4. Remove the bay leaf and puree the soup in a blender or using an immersion blender until smooth.

  5. Return the soup to the saucepan and add the crab meat. Season with salt and black pepper to taste.

  6. Heat the soup over low heat for 5-10 minutes, stirring frequently, until the crab is heated through.

  7. Serve hot, garnished with chopped parsley.
