4 medium-sized apples (conventional or organic)
1 cup plain Greek yogurt
1/2 cup chopped nuts (almonds or walnuts work well)
2 tablespoons chia seeds
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
1 tablespoon honey or a sugar substitute (optional, depending on sweetness preference)
A pinch of salt
Preheat your oven to 375°F (190°C).
Core each apple, leaving the bottom intact to form a well.
In a bowl, mix together Greek yogurt, chopped nuts, chia seeds, cinnamon, vanilla extract, honey (if using), and a pinch of salt.
Stuff each apple with the yogurt mixture, ensuring it's evenly distributed.
Place the stuffed apples in a baking dish and bake for 25-30 minutes or until the apples are tender.
Remove from the oven and let them cool slightly before serving.
