Ingredients

  • 4 medium-sized apples (conventional or organic)

  • 1 cup plain Greek yogurt

  • 1/2 cup chopped nuts (almonds or walnuts work well)

  • 2 tablespoons chia seeds

  • 1 tablespoon ground cinnamon

  • 1 tablespoon vanilla extract

  • 1 tablespoon honey or a sugar substitute (optional, depending on sweetness preference)

  • A pinch of salt

Directions

  1. Preheat your oven to 375°F (190°C).

  2. Core each apple, leaving the bottom intact to form a well.

  3. In a bowl, mix together Greek yogurt, chopped nuts, chia seeds, cinnamon, vanilla extract, honey (if using), and a pinch of salt.

  4. Stuff each apple with the yogurt mixture, ensuring it's evenly distributed.

  5. Place the stuffed apples in a baking dish and bake for 25-30 minutes or until the apples are tender.

  6. Remove from the oven and let them cool slightly before serving.
