Chili Rubbed Chicken Salad

2 boneless chicken breast halves, cubed
4 cups lettuce, chopped
1 red, yellow, or orange pepper, sliced
1 cucumber, sliced
2 medium tomatoes, cut into wedges
2 tbsp POMI tomato paste
½ tbsp chili powder
1 tbsp water
½ tbsp rice vinegar
1 clove garlic, minced
½ tsp sea salt
Olive oil cooking spray
In a small bowl, combine the chili powder, sea salt, and minced garlic to make the chili rub.
Spray a skillet with olive oil cooking spray and heat it over medium-high heat.
Rub the chili mixture evenly onto the cubed chicken breast.
Once the skillet is hot, add the chicken cubes and cook for about 5-7 minutes, or until they are cooked through and nicely browned. Stir occasionally to ensure even cooking.
While the chicken is cooking, prepare the salad ingredients. In a large bowl, combine the chopped lettuce, sliced pepper, sliced cucumber, and tomato wedges.
In a separate small bowl, whisk together the POMI tomato paste, water, rice vinegar, and a pinch of sea salt to make the dressing.
Once the chicken is cooked, remove it from the skillet and let it cool slightly.
