1/2 cup chickpea flour
2/3 cup water
1 tablespoon olive oil
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 small onion, chopped
2 cloves of garlic, minced
Salt and black pepper to taste
2 tablespoons fresh herbs (like parsley, cilantro, or dill), chopped
1/2 cup egg whites
1 cup plain Greek yogurt (non-fat)
Directions
In a bowl, whisk together the chickpea flour and water until smooth. Set aside.
Heat the olive oil in a non-stick pan over medium heat.
Add the chopped bell peppers and onion to the pan and sauté until they start to soften.
Add the minced garlic, salt, and pepper to the pan and continue sautéing for another minute or two.
Pour the chickpea flour mixture into the pan over the sautéed vegetables, ensure it's spread evenly.
Scatter the chopped fresh herbs over the top.
Pour the egg whites evenly over the mixture in the pan. Cover and cook on low heat until the omelette is set, which should take about 10-15 minutes.
While the omelette is cooking, stir the Greek yogurt until smooth.
Once the omelette is done, slide it onto a plate and serve with the Greek yogurt on the side.
