  • 1 tbsp lemon juice

  • 1 tsp dried oregano

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

  • 2 medium cucumbers, diced

  • 2 medium tomatoes, diced

  • 1/2 small red onion, thinly sliced

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 1/2 cup plain Greek yogurt

  • 1/2 cup sour cream

  • 1/4 cup chopped fresh dill

  • 1 garlic clove, minced

Directions

  1. Preheat your grill or grill pan to medium-high heat.

  2. In a large bowl, whisk together the olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add the chicken and toss to coat.

  3. Thread the chicken onto skewers and grill for 10-12 minutes, turning occasionally, until the chicken is cooked through.

  4. While the chicken is cooking, prepare the cucumber-tomato salad. In a large bowl, combine the diced cucumbers, tomatoes, red onion, parsley, and mint. Toss to combine.

  5. To make the tzatziki sauce, whisk together the Greek yogurt, sour cream, dill, garlic, salt, and pepper in a small bowl.
