Ingredients for the Salad:

  • 2 skinless, boneless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon ground coriander

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon ground turmeric

  • Salt and black pepper to taste

  • 4 cups mixed greens

  • 1/2 cup sliced cucumber

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup sliced red onion

  • 1/4 cup crumbled feta cheese

  • 1/4 cup chopped fresh parsley



Ingredients for the Garlic Yogurt Sauce:

  • 1/2 cup plain Greek yogurt

  • 1 clove garlic, minced

  • 1 tablespoon lemon juice

  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 400°F.

  2. In a small bowl, mix together olive oil, cumin, smoked paprika, coriander, cinnamon, turmeric, salt, and black pepper. Rub the spice mixture all over the chicken breasts.

  3. Place the chicken breasts on a baking sheet and roast in the preheated oven for 20-25 minutes or until fully cooked.

  4. While the chicken is cooking, prepare the garlic yogurt sauce by whisking together the Greek yogurt, minced garlic, lemon juice, and salt in a small bowl. Set aside.

  5. Once the chicken is done, let it cool slightly before slicing it into thin strips.

  6. In a large bowl, mix together the mixed greens, sliced cucumber, cherry tomatoes, and red onion.

  7. Divide the salad mixture into two bowls and top each with the sliced chicken.

  8. Drizzle the garlic yogurt sauce over the chicken and sprinkle with crumbled feta cheese and chopped parsley.
