1 cup cherry tomatoes, halved
1/2 cup chopped cucumber
1/4 cup chopped red onion
1/4 cup crumbled feta cheese
1/4 cup chopped fresh parsley
2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
Salt and black pepper to taste
In a large bowl, combine the cooked chicken, mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
