Chicken Caesar salad with bacon and a low-carb dressing
Pair this Chicken Caesar Salad with a refreshing glass of water or unsweetened iced tea for a satisfying and hydrating meal. For added crunch, sprinkle some crushed nuts or seeds on top. Consider enjoying this salad as a main course for lunch or a light dinner.
For the Salad:
1 lb boneless, skinless chicken breasts, grilled and sliced
8 cups Romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup grated Parmesan cheese
6 slices cooked bacon, crumbled
For the Dressing:
1/2 cup mayonnaise (choose a sugar-free variety)
2 tablespoons Dijon mustard
2 cloves garlic, minced
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
Salt and pepper to taste
In a large bowl, combine the chopped Romaine lettuce, cherry tomatoes, Parmesan cheese, and crumbled bacon.
In a separate bowl, whisk together the mayonnaise, Dijon mustard, minced garlic, lemon juice, Worcestershire sauce, salt, and pepper to create the dressing.
Add the sliced grilled chicken to the salad and drizzle the dressing over the top.
Toss the salad until all ingredients are well coated with the dressing.
Serve the Chicken Caesar Salad on individual plates, garnishing with extra Parmesan cheese and bacon if desired.
