Ingredients

  • 2 boneless, skinless chicken breasts (about 8 oz each), grilled and sliced

  • 8 cups chopped romaine lettuce

  • 1 cup cherry tomatoes, halved

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup plain Greek yogurt

  • 2 tablespoons lemon juice

  • 1 tablespoon Dijon mustard

  • 1 clove garlic, minced

  • 1 teaspoon Worcestershire sauce

  • Salt and black pepper to taste

  • 2 slices whole grain bread, cut into cubes

  • 1 tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • Salt to taste

Directions

  • Preheat the oven to 375°F (190°C).

  • In a small bowl, whisk together the ingredients for the dressing - Greek yogurt, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, salt, and pepper. Set aside.

  • Toss the bread cubes with olive oil, garlic powder, and salt. Spread them out on a baking sheet and bake for about 10-12 minutes or until golden and crispy. Remove from the oven and let them cool.

  • In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, and grilled chicken slices.

  • Drizzle the prepared dressing over the salad and toss until well coated.

  • Sprinkle grated Parmesan cheese and whole grain croutons over the salad just before serving.

  • Serve immediately and enjoy!
