2 boneless, skinless chicken breasts (about 8 oz each), grilled and sliced
8 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1/2 cup grated Parmesan cheese
1/4 cup plain Greek yogurt
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 clove garlic, minced
1 teaspoon Worcestershire sauce
Salt and black pepper to taste
2 slices whole grain bread, cut into cubes
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt to taste
Directions
Preheat the oven to 375°F (190°C).
In a small bowl, whisk together the ingredients for the dressing - Greek yogurt, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, salt, and pepper. Set aside.
Toss the bread cubes with olive oil, garlic powder, and salt. Spread them out on a baking sheet and bake for about 10-12 minutes or until golden and crispy. Remove from the oven and let them cool.
In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, and grilled chicken slices.
Drizzle the prepared dressing over the salad and toss until well coated.
Sprinkle grated Parmesan cheese and whole grain croutons over the salad just before serving.
Serve immediately and enjoy!
