Ingredients

  • 8 cups broccoli florets

  • 3 ribs celery with leaves, chopped

  • 1/2 medium onion, chopped

  • 1 teaspoon dried parsley

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried marjoram

  • Sea salt and pepper to taste

  • 2 cups organic, no-salt chicken broth

  • 4 boneless, skinless chicken breasts

  • Olive oil cooking spray

Directions

  1. Preheat your oven to 375°F (190°C).

  2. In a large pot, bring water to a boil. Add the broccoli florets and blanch them for 2-3 minutes until they turn bright green. Drain the broccoli and set it aside.

  3. In a separate large skillet, heat the olive oil cooking spray over medium heat. Add the chopped celery and onion. Sauté for about 5 minutes until they become tender.

  4. Sprinkle the dried parsley, dried thyme, dried marjoram, sea salt, and pepper over the celery and onion mixture. Stir well to combine.

  5. Pour the chicken broth into the skillet and bring it to a simmer.

  6. Meanwhile, spray a baking dish with olive oil cooking spray.

  7. Place the chicken breasts in the baking dish and season them with a pinch of sea salt and pepper.

  8. Pour the simmering vegetable broth over the chicken breasts.

  9. Cover the baking dish with foil and place it in the preheated oven.

  10. Bake for about 25-30 minutes or until the chicken is cooked through and no longer pink in the center.

  11. Remove the baking dish from the oven and uncover it.

  12. Arrange the blanched broccoli florets on top of the chicken breasts.

  13. Return the dish to the oven, uncovered, and bake for an additional 5 minutes to allow the broccoli to heat through.

  14. Once done, remove the casserole from the oven and let it rest for a few minutes before serving.

  15. Serve the Chicken Broccoli Casserole hot and enjoy!
