  • 4 oz boneless, skinless chicken breast, cut into bite-size pieces

  • 12 asparagus spears, trimmed and cut into bite-size pieces

  • 1/2 cup low-sodium chicken broth

  • 1 clove garlic, minced

  • 2 tbsp chopped onion

  • 1/2 tsp paprika

  • 1/2 tsp dried thyme

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 1/4 cup shredded Parmesan cheese (optional)


  1. Preheat the oven to 375°F.

  2. In a large bowl, mix together the chicken, asparagus, chicken broth, garlic, onion, paprika, thyme, salt, pepper, and olive oil.

  3. Transfer the mixture to an 8-inch square baking dish.

  4. Bake for 25-30 minutes, or until the chicken is cooked through and the asparagus is tender.

  5. If using, sprinkle the Parmesan cheese over the top of the chicken and asparagus during the last 5 minutes of baking.
