Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 zucchini

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1 small red onion

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 teaspoon dried oregano

  • Salt and pepper to taste


For the salsa:


  • 2 medium tomatoes, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 small jalapeño pepper, seeded and finely chopped

  • Juice of 1 lime

  • Salt and pepper to taste

Directions

  1. Preheat your grill or broiler to medium-high heat.

  2. Soak wooden skewers in water for about 15 minutes to prevent them from burning.

  3. Cut the chicken breasts into bite-sized pieces and set aside.

  4. Cut the zucchini, red bell pepper, and yellow bell pepper into chunks. Cut the red onion into wedges.

  5. In a small bowl, mix together olive oil, garlic powder, paprika, dried oregano, salt, and pepper.

  6. Thread the chicken and vegetables onto the skewers, alternating between pieces of chicken and vegetables.

  7. Brush the chicken and vegetables with the olive oil mixture, coating them evenly.

  8. Place the skewers on the preheated grill or under the broiler. Cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
