Ingredients

  • 1 boneless, skinless chicken breast

  • 2 cups spinach

  • 2 tsp garlic powder

  • 1 clove garlic, minced

  • 1/2 cup chicken broth

  • 1 tbsp olive oil

  • Sea salt, to taste

  • Black pepper, to taste

  • 1/2 lemon, juiced

Directions

  1. In a small bowl, mix the garlic powder, minced garlic, sea salt, and black pepper. Rub the mixture all over the chicken breast.

  2. In a skillet over medium-high heat, heat the olive oil. Add the chicken breast and cook for about 6-8 minutes on each side, or until it is cooked through.

  3. Remove the chicken from the skillet and set it aside.

  4. In the same skillet, add the chicken broth and bring it to a simmer.

  5. Add the spinach to the skillet and stir it until it wilts about 1-2 minutes.
