1 tablespoon olive oil
1 pound boneless, skinless chicken breast, cut into bite-size pieces
2 cloves garlic, minced
1 teaspoon dried thyme
2 teaspoons smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 cup chicken broth
1 tablespoon butter
1 tablespoon chopped fresh parsley leaves, for garnish
Directions
Heat olive oil in a large skillet over medium-high heat.
Add chicken and garlic and cook, stirring occasionally, until the chicken is cooked through about 8-10 minutes.
Add thyme, smoked paprika, salt, and black pepper. Stir to coat the chicken and cook for another 2-3 minutes.
Add chicken broth and butter and stir to combine. Simmer for 2-3 minutes or until the sauce has thickened slightly.
Garnish with chopped parsley before serving.
