1 ½ cups of celery, chopped
2 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups organic, no salt broth or homemade vegetable broth
¼ tsp thyme
1 bay leaf
½ tsp dried basil
Salt and pepper to taste
Optional: 1/4 cup heavy cream or unsweetened almond milk for a creamier consistency
Directions
Heat the olive oil in a saucepan over medium heat. Add the onion and garlic and cook until the onion is translucent.
Add the chopped celery and cook for 5-7 minutes, stirring occasionally.
Add the broth, thyme, bay leaf, dried basil, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, until the celery is very soft.
Remove the bay leaf and puree the soup with an immersion blender or transfer to a blender or food processor and puree until smooth.
Return the soup to the saucepan and heat over low heat. If desired, stir in 1/4 cup heavy cream or unsweetened almond milk for a creamier consistency. Adjust seasoning as necessary.
Serve hot, garnished with fresh chopped herbs, if desired.
