Ingredients

  • 1 ½ cups of celery, chopped

  • 2 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups organic, no salt broth or homemade vegetable broth

  • ¼ tsp thyme

  • 1 bay leaf

  • ½ tsp dried basil

  • Salt and pepper to taste

  • Optional: 1/4 cup heavy cream or unsweetened almond milk for a creamier consistency

Directions

  1. Heat the olive oil in a saucepan over medium heat. Add the onion and garlic and cook until the onion is translucent.

  2. Add the chopped celery and cook for 5-7 minutes, stirring occasionally.

  3. Add the broth, thyme, bay leaf, dried basil, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, until the celery is very soft.

  4. Remove the bay leaf and puree the soup with an immersion blender or transfer to a blender or food processor and puree until smooth.

  5. Return the soup to the saucepan and heat over low heat. If desired, stir in 1/4 cup heavy cream or unsweetened almond milk for a creamier consistency. Adjust seasoning as necessary.

  6. Serve hot, garnished with fresh chopped herbs, if desired.
