½ cup lightly packed fresh cilantro
4 garlic cloves, coarsely chopped
1 shallot, coarsely chopped
1 tablespoon fresh oregano
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
½ teaspoon crushed red pepper
¼ cup lemon juice
2 tablespoons red wine vinegar
½ cup olive oil

2 tablespoons kosher salt
½ to 1 teaspoon cayenne pepper, depending on personal preference
4 6oz steaks (your choice of cut)

Preparing the Chimichurri Sauce: a. In a food processor or blender, add the parsley, cilantro, garlic cloves, shallot, fresh oregano, kosher salt, fresh ground pepper, and crushed red pepper. b. Pulse the ingredients a few times until they are well combined and finely chopped. c. Add the lemon juice and red wine vinegar to the mixture and pulse again to combine. d. While the food processor or blender is running, slowly drizzle in the olive oil until the sauce becomes smooth and well blended. e. Transfer the chimichurri sauce to a bowl and set it aside.
