1 head raw cauliflower
1 tbsp avocado oil
1/4 cup diced onion
2 cloves garlic, minced
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped fresh cilantro
Directions
Cut the cauliflower into florets, discarding the core and leaves.
Pulse the cauliflower in a food processor until it resembles rice grains.
Heat the avocado oil in a large skillet over medium heat.
Add the onion and sauté until softened, about 3 minutes.
Add the garlic and sauté for another minute.
Add the cauliflower "rice" to the skillet, along with the cumin, paprika, salt, and black pepper.
