Ingredients

  • 200g boneless, skinless chicken breast (62g protein)

  • 2 medium-sized tomatoes

  • 200g fresh mozzarella cheese (16g protein)

  • Fresh basil leaves

  • 2 tablespoons extra virgin olive oil

  • Salt and pepper to taste

Directions

  1. Preheat your grill or grill pan over medium heat.

  2. Season the chicken breasts with salt and pepper on both sides.

  3. Grill the chicken breasts for about 6-8 minutes on each side until they are cooked through and reach an internal temperature of 165°F (74°C). Remove from heat and let them rest for a few minutes.

  4. While the chicken is resting, slice the tomatoes and mozzarella cheese into thick slices.

  5. Arrange the tomato and mozzarella slices on a plate, alternating them.

  6. Tear the fresh basil leaves into small pieces and sprinkle them over the tomato and mozzarella slices.

  7. Slice the grilled chicken into thin strips and place them on top of the Caprese salad.

  8. Drizzle the extra virgin olive oil over the salad and season with salt and pepper to taste.

  9. Serve the Caprese salad with grilled chicken immediately and enjoy.
