Ingredients

  • 1 lb lean ground turkey (99% fat-free)

  • 1 small onion, finely diced (organic recommended)

  • 2 cloves garlic, minced (organic recommended)

  • 1 small bell pepper, finely chopped (organic recommended)

  • 1 large pasture-raised egg

  • 1/3 cup almond flour (gluten-free, low-carb binder)

  • 1 tbsp no-sugar-added Dijon mustard

  • 1 tbsp tomato paste (organic, no sugar added)

  • 2 tsp smoked paprika

  • 1 tsp dried oregano

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp sea salt

  • ½ tsp black pepper

  • ½ tsp cayenne pepper (optional for extra spice)

  • 1 tbsp extra virgin olive oil

  • 1 tbsp chopped fresh parsley

Directions

  1. Preheat Oven: Set your oven to 375°F (190°C). Lightly grease a loaf pan with olive oil or line it with parchment paper.

  2. Sauté Veggies: Heat 1 tbsp olive oil in a pan. Sauté onions, garlic, and bell peppers until softened (about 3 minutes). Let cool slightly.

  3. Mix Ingredients: In a large bowl, combine the ground turkey, sautéed veggies, egg, almond flour, tomato paste, Dijon mustard, and all seasonings. Mix until well incorporated.

  4. Form the Loaf: Shape the mixture into a loaf and place it in the prepared pan.

  5. Bake: Cook for 35-40 minutes or until the internal temperature reaches 165°F (74°C).

  6. Rest & Serve: Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley.
