1 lb lean ground turkey (99% fat-free)
1 small onion, finely diced (organic recommended)
2 cloves garlic, minced (organic recommended)
1 small bell pepper, finely chopped (organic recommended)
1 large pasture-raised egg
1/3 cup almond flour (gluten-free, low-carb binder)
1 tbsp no-sugar-added Dijon mustard
1 tbsp tomato paste (organic, no sugar added)
2 tsp smoked paprika
1 tsp dried oregano
1 tsp onion powder
1 tsp garlic powder
1 tsp sea salt
½ tsp black pepper
½ tsp cayenne pepper (optional for extra spice)
1 tbsp extra virgin olive oil
1 tbsp chopped fresh parsley
Directions
Preheat Oven: Set your oven to 375°F (190°C). Lightly grease a loaf pan with olive oil or line it with parchment paper.
Sauté Veggies: Heat 1 tbsp olive oil in a pan. Sauté onions, garlic, and bell peppers until softened (about 3 minutes). Let cool slightly.
Mix Ingredients: In a large bowl, combine the ground turkey, sautéed veggies, egg, almond flour, tomato paste, Dijon mustard, and all seasonings. Mix until well incorporated.
Form the Loaf: Shape the mixture into a loaf and place it in the prepared pan.
Bake: Cook for 35-40 minutes or until the internal temperature reaches 165°F (74°C).
Rest & Serve: Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley.
