Ingredients

  • 1 cup plain, unsweetened Bulgarian yogurt (look for a brand with no added sugars)

  • 1/2 cup mixed berries (such as strawberries, blueberries, raspberries, or blackberries)

  • 2 tablespoons chopped nuts (almonds, walnuts, or pistachios)

  • 1 tablespoon chia seeds

  • 1/2 teaspoon vanilla extract (optional)

  • 1 teaspoon sugar substitute (stevia, erythritol, or any other diabetic-friendly sweetener, adjust to taste)

  • Fresh mint leaves for garnish (optional)

Directions

  1. In a mixing bowl, combine the Bulgarian yogurt and vanilla extract (if using). Mix well until the vanilla is evenly distributed.

  2. Add the sugar substitute to the yogurt and stir until it's sweetened to your desired taste. Remember that some sweetness will come from the berries as well.

  3. Gently fold in the chia seeds into the yogurt mixture. Chia seeds will add extra protein, fiber, and healthy fats to the recipe.

  4. Wash and dry the mixed berries, then chop any larger berries into bite-sized pieces.
