Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 cups chopped broccoli florets

  • 2 cups low-sodium chicken broth

  • 1 cup unsweetened almond milk

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup plain Greek yogurt

  • Salt and black pepper, to taste

Directions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until soft and translucent, about 5 minutes.

  2. Add chopped broccoli florets and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.

  3. Using an immersion blender, puree the soup until smooth.

  4. Stir in almond milk, shredded cheddar cheese, and Greek yogurt until cheese is melted and soup is creamy.

  5. Season with salt and black pepper to taste.

  6. Serve hot, garnished with extra shredded cheddar cheese, if desired.
