1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
2 cups chopped broccoli florets
2 cups low-sodium chicken broth
1 cup unsweetened almond milk
1/2 cup shredded cheddar cheese
1/4 cup plain Greek yogurt
Salt and black pepper, to taste
Directions
Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until soft and translucent, about 5 minutes.
Add chopped broccoli florets and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
