Ingredients

For the Turkey Sausage


  • ½ lb lean ground turkey (93-99% lean) (organic recommended)

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp sea salt

  • ¼ tsp black pepper

  • ¼ tsp dried oregano

  • ¼ tsp crushed red pepper flakes (optional for spice)


For the Scramble


  • 6 large egg whites (pasture-raised)

  • 1 tbsp unsweetened almond milk

  • 1 cup fresh spinach, chopped (organic recommended)

  • ½ cup cherry tomatoes, halved (organic recommended)

  • ¼ cup bell peppers, diced (organic recommended)

  • ¼ cup red onion, finely diced (organic recommended)

  • 1 tbsp extra virgin olive oil

  • ¼ tsp sea salt

  • ¼ tsp black pepper

Directions

Step 1: Make the Turkey Sausage


  1. Heat ½ tbsp olive oil in a skillet over medium heat.

  2. Add ground turkey and season with paprika, garlic powder, onion powder, salt, pepper, oregano, and red pepper flakes.

  3. Cook for 5-6 minutes, breaking it up with a spatula, until fully cooked and slightly browned. Set aside.


Step 2: Prepare the Scramble


  1. In a bowl, whisk together egg whites, almond milk, salt, and black pepper.

  2. Heat ½ tbsp olive oil in the same skillet over medium-low heat.

  3. Add onion, bell peppers, and cherry tomatoes, sauté for 2-3 minutes until softened.

  4. Add spinach and cook for another 30 seconds until wilted.


Step 3: Combine & Serve


  1. Pour egg white mixture into the skillet, gently stirring with a spatula until eggs are fully cooked, about 2-3 minutes.

  2. Stir in cooked turkey sausage and combine.

  3. Remove from heat and serve immediately.
