For the Turkey Sausage
½ lb lean ground turkey (93-99% lean) (organic recommended)
½ tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
¼ tsp sea salt
¼ tsp black pepper
¼ tsp dried oregano
¼ tsp crushed red pepper flakes (optional for spice)
For the Scramble
6 large egg whites (pasture-raised)
1 tbsp unsweetened almond milk
1 cup fresh spinach, chopped (organic recommended)
½ cup cherry tomatoes, halved (organic recommended)
¼ cup bell peppers, diced (organic recommended)
¼ cup red onion, finely diced (organic recommended)
1 tbsp extra virgin olive oil
¼ tsp sea salt
¼ tsp black pepper
Directions
Step 1: Make the Turkey Sausage
Heat ½ tbsp olive oil in a skillet over medium heat.
Add ground turkey and season with paprika, garlic powder, onion powder, salt, pepper, oregano, and red pepper flakes.
Cook for 5-6 minutes, breaking it up with a spatula, until fully cooked and slightly browned. Set aside.
Step 2: Prepare the Scramble
In a bowl, whisk together egg whites, almond milk, salt, and black pepper.
Heat ½ tbsp olive oil in the same skillet over medium-low heat.
Add onion, bell peppers, and cherry tomatoes, sauté for 2-3 minutes until softened.
Add spinach and cook for another 30 seconds until wilted.
Step 3: Combine & Serve
Pour egg white mixture into the skillet, gently stirring with a spatula until eggs are fully cooked, about 2-3 minutes.
Stir in cooked turkey sausage and combine.
Remove from heat and serve immediately.
