  • 1 cup egg whites

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 2 turkey sausage links, casings removed

  • 1/2 cup diced bell pepper

  • 1/4 cup diced onion

  • 1/4 cup diced tomato

  • 1/4 cup shredded cheddar cheese (optional)

  • Fresh parsley or cilantro, chopped, for garnish (optional)


  1. In a medium bowl, whisk the eggs with salt and pepper to taste. Set aside.

  2. Heat the olive oil in a large non-stick skillet over medium heat. Add the turkey sausage, breaking it up with a spatula as it cooks, until browned and cooked through.
