1 cup egg whites
Salt and pepper, to taste
1 tbsp olive oil
2 turkey sausage links, casings removed
1/2 cup diced bell pepper
1/4 cup diced onion
1/4 cup diced tomato
1/4 cup shredded cheddar cheese (optional)
Fresh parsley or cilantro, chopped, for garnish (optional)
In a medium bowl, whisk the eggs with salt and pepper to taste. Set aside.
Heat the olive oil in a large non-stick skillet over medium heat. Add the turkey sausage, breaking it up with a spatula as it cooks, until browned and cooked through.
Add the diced bell pepper and onion to the skillet, and sauté for 3-4 minutes until they begin to soften.
