2 lean ground beef patties (4 oz each)
Salt and pepper, to taste
1 tbsp olive oil
2 large eggs
1 ripe avocado, sliced
1 tbsp white vinegar
Fresh parsley, chopped, for garnish (optional)
Season the beef patties with salt and pepper to taste.
In a large skillet, heat the olive oil over medium heat. Add the seasoned beef patties and cook for 4-5 minutes per side or until desired doneness is reached. Remove from the skillet and set aside.
Fill a medium saucepan with water and bring it to a gentle simmer. Add the white vinegar to the water.
Crack one egg into a small bowl. Gently slide the egg into the simmering water. Repeat with the second egg. Cook for 3-4 minutes until the whites are set, and the yolks are still runny.
Use a slotted spoon to remove the poached eggs from the water, draining any excess liquid.
To serve, place a beef patty on each plate, top with a poached egg, and arrange avocado slices alongside. Garnish with chopped parsley if desired.
