Ingredients

  • 4 lean beef patties (or you could use turkey or chicken patties as per your preference)

  • 8 egg whites

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • 1/2 cup chopped bell peppers

  • 1/2 cup chopped onions

  • 1/2 cup chopped spinach (optional)

  • Low-fat cheese (optional)

Directions

  1. Heat a non-stick skillet over medium heat. Add the beef patties and cook for about 4-5 minutes on each side or until they're cooked through. Once cooked, remove them from the skillet and keep warm.

  2. In the same skillet, add a tablespoon of olive oil and sauté the chopped onions and bell peppers until they're soft.

  3. While the vegetables are cooking, crack the egg whites into a bowl, add a pinch of salt and pepper, and whisk until frothy.

  4. Once the vegetables are cooked, pour the egg whites into the skillet. Let them cook undisturbed for a few seconds until they start to set around the edges.

  5. Stir the eggs gently, moving them around the skillet until they form soft curds. If you're using spinach, add it at this point and stir until it's just wilted. If you're using cheese, sprinkle it over the top of the egg scramble and cover the skillet for a minute to let it melt.

  6. Serve each beef patty with a portion of the egg white scramble on the side.
