  • 4 oz ground bison

  • 1/2 green bell pepper, diced

  • 1/2 onion, diced

  • 1 clove garlic, minced

  • 1 can (8 oz) diced tomatoes

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. Add the onion, green bell pepper, and garlic to the pot. Cook, stirring frequently, until the vegetables are softened, about 5 minutes.

  3. Add the ground bison to the pot. Cook, breaking up the meat with a spoon, until it's browned and cooked through.

  4. Stir in the diced tomatoes, chili powder, and cumin. Season with salt and pepper.

  5. Reduce the heat to low, cover the pot, and let the chili simmer for about 20 minutes to allow the flavors to meld together.

  6. Check the seasoning, adding more salt, pepper, or spices if needed.

  7. Serve the chili hot, with optional toppings like shredded cheese, sour cream, or chopped fresh cilantro if desired.
