Ingredients

  • 4 oz ground bison

  • 1/2 green bell pepper, diced

  • 1/2 onion, diced

  • 1/2 cup cauliflower florets

  • 1 clove garlic, minced

  • 1 can (8 oz) diced tomatoes

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • Salt and pepper to taste

  • 1 tablespoon olive oil

Directions

  • Heat the olive oil in a large pot or Dutch oven over medium heat.

  • Add the onion, green bell pepper, cauliflower, and garlic to the pot. Cook, stirring frequently, until the vegetables are softened, about 7-8 minutes.

  • Add the ground bison to the pot. Cook, breaking up the meat with a spoon, until it's browned and cooked through.

  • Stir in the diced tomatoes, chili powder, and cumin. Season with salt and pepper.

  • Reduce the heat to low, cover the pot, and let the chili simmer for about 20-30 minutes to allow the flavors to meld together and the cauliflower to soften.

  • Check the seasoning, adding more salt, pepper, or spices if needed.

  • Serve the chili hot, with optional toppings like shredded cheese, sour cream, or chopped fresh cilantro if desired.
