Ingredients
1 cup raspberries
1 cup blueberries
8-10 large strawberries
1/4 cup low-carb sweetener (such as erythritol or monk fruit)
1/4 cup water
Directions
In a medium saucepan, combine the berries, low-carb sweetener, and water.
Bring the mixture to a boil over medium-high heat, stirring occasionally.
Once boiling, reduce the heat to low and let the mixture simmer for 10-15 minutes, or until it has thickened to your desired consistency.
Remove the pan from heat and let the berry mixture cool for a few minutes.
If you prefer a smoother consistency, you can use an immersion blender or transfer the mixture to a blender and blend until smooth.
Serve the berry glaze warm over your favorite low-carb pancakes, waffles, or other desserts.
