Ingredients

  • 4 oz (113 g) lean beef steak, thinly sliced

  • 1 tablespoon olive oil

  • 1/2 small onion, thinly sliced

  • 1 clove garlic, minced

  • 1/2 cup sliced bell peppers (assorted colors)

  • 1/2 cup sliced zucchini

  • 1/2 cup sliced mushrooms

  • 1/2 cup broccoli florets

  • 2 tablespoons low-sodium soy sauce

  • 1 tablespoon rice vinegar

  • 1/2 teaspoon sesame oil

  • 1/2 teaspoon ginger paste

  • 1/4 teaspoon red pepper flakes (optional)

  • Fresh cilantro, chopped (for garnish)

Directions

  1. In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, sesame oil, ginger paste, and red pepper flakes (if using). Set aside.

  2. Heat the olive oil in a large non-stick skillet or wok over medium-high heat.

  3. Add the thinly sliced beef to the skillet and stir-fry for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

  4. In the same skillet, add the sliced onions and minced garlic. Stir-fry for 1-2 minutes until the onions become translucent.

  5. Add the bell peppers, zucchini, mushrooms, and broccoli to the skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

  6. Return the cooked beef to the skillet and pour the sauce over the beef and vegetables. Stir-fry for an additional 1-2 minutes until everything is well coated and heated through.

  7. Remove from heat and garnish with fresh chopped cilantro.

  8. Serve the beef stir fry hot and enjoy!
