Ingredients

  • 1/2 lb beef stew meat, cubed

  • 1/2 tablespoon olive oil

  • 1/2 onion, diced

  • 1-2 cloves garlic, minced

  • 1 bell pepper (any color), diced

  • 1/2 jalapeño pepper, seeds removed and minced (optional for extra heat)

  • 1/2 can (about 7 oz) diced tomatoes

  • 2 cups beef broth

  • 1/2 teaspoon freshly ground black pepper (adjust to taste)

  • 1/4 teaspoon salt (or to taste)

  • 1/2 teaspoon paprika

  • 1/2 teaspoon dried oregano

  • 1/2 bay leaf

  • 1 carrot, sliced

  • 1 celery stalk, chopped

  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

  1. Brown the Beef: In a pot, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.

  2. Sauté Vegetables: In the same pot, add the diced onion and sauté until translucent. Add the garlic, bell pepper, and jalapeño (if using) and continue to sauté for 2-3 minutes until softened.

  3. Combine Ingredients: Return the browned beef to the pot. Add the diced tomatoes, beef broth, black pepper, salt, paprika, oregano, and bay leaf. Stir to combine.

  4. Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer for about 15 minutes.

  5. Add Remaining Vegetables: After 15 minutes, add the sliced carrot and chopped celery to the pot. Continue to simmer for another 10-15 minutes, or until the vegetables and beef are tender.
