Serving Suggestions:
Green Salad: A simple green salad with mixed greens, cherry tomatoes, cucumber slices, and a light vinaigrette can provide a fresh contrast to the hearty soup.
Steamed Vegetables: Lightly steamed broccoli or asparagus with a drizzle of olive oil, lemon zest, and a sprinkle of sea salt can complement the meatiness of the soup.
Cauliflower Rice: For those watching their carb intake, a side of cauliflower rice sautéed with garlic and onions can be a great alternative to regular rice.
Zucchini Noodles (Zoodles): A quick sauté of zucchini noodles in olive oil with some minced garlic can add a touch of freshness and texture.

Ingredients
1/2 lb beef stew meat, cubed
1/2 tablespoon olive oil
1/2 onion, diced
1-2 cloves garlic, minced
1 bell pepper (any color), diced
1/2 jalapeño pepper, seeds removed and minced (optional for extra heat)
1/2 can (about 7 oz) diced tomatoes
2 cups beef broth
1/2 teaspoon freshly ground black pepper (adjust to taste)
1/4 teaspoon salt (or to taste)
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 bay leaf
1 carrot, sliced
1 celery stalk, chopped
2 tablespoons fresh parsley, chopped (for garnish)
Directions
Brown the Beef: In a pot, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
Sauté Vegetables: In the same pot, add the diced onion and sauté until translucent. Add the garlic, bell pepper, and jalapeño (if using) and continue to sauté for 2-3 minutes until softened.
Combine Ingredients: Return the browned beef to the pot. Add the diced tomatoes, beef broth, black pepper, salt, paprika, oregano, and bay leaf. Stir to combine.
Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer for about 15 minutes.
Add Remaining Vegetables: After 15 minutes, add the sliced carrot and chopped celery to the pot. Continue to simmer for another 10-15 minutes, or until the vegetables and beef are tender.
