Beef and broccoli stir-fry with cauliflower rice

Ingredients

For the Stir-Fry:


  • 1 lb lean beef, thinly sliced

  • 2 cups broccoli florets

  • 1 bell pepper, thinly sliced

  • 2 cloves garlic, minced

  • 2 tablespoons low-sodium soy sauce

  • 1 tablespoon olive oil

  • 1 teaspoon sesame oil

  • 1 teaspoon ginger, grated

  • Salt and pepper to taste


For the Cauliflower Rice Dressing:


  • 1 head cauliflower, grated

  • 1 tablespoon olive oil

  • 2 green onions, thinly sliced

  • 1 teaspoon rice vinegar

  • Salt and pepper to taste

Directions

  1. In a large skillet, heat olive oil over medium-high heat. Add thinly sliced beef and cook until browned. Remove beef from the skillet and set aside.

  2. In the same skillet, add a bit more olive oil if needed. Sauté garlic and ginger until fragrant.

  3. Add broccoli and bell pepper to the skillet, cooking until they start to soften.

  4. Return the cooked beef to the skillet. Stir in soy sauce and sesame oil. Cook for an additional 2-3 minutes until everything is well combined.

  5. For the cauliflower rice dressing, heat olive oil in a separate pan. Add grated cauliflower and cook until tender.

  6. Stir in green onions, rice vinegar, salt, and pepper. Cook for an additional 2-3 minutes.

  7. Serve the beef and broccoli stir-fry over the cauliflower rice dressing.
