Ingredients

  • 2 tbsp snipped fresh basil

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 4 boneless, skinless chicken breast halves

  3. Carefully make a pocket in each chicken breast half by cutting a slit lengthwise along the side, ensuring not to cut all the way through. The pocket should be large enough to stuff with the basil and garlic mixture.

  4. Spoon equal amounts of the basil and garlic mixture into each pocket of the chicken breasts, spreading it evenly.

  5. In a separate small bowl, combine the finely shredded lemon peel and lemon juice. Stir well.

  6. Place the stuffed chicken breasts in a baking dish or on a baking sheet. Drizzle the lemon juice mixture over the chicken breasts, ensuring they are well coated.

  7. Bake the chicken breasts in the preheated oven for about 25-30 minutes or until the chicken is cooked through and no longer pink in the center. The cooking time may vary depending on the thickness of the chicken breasts, so it's recommended to use a meat thermometer to check if the internal temperature reaches 165°F (74°C).
