Ingredients

  • 4 salmon fillets (wild-caught, if possible)

  • 2 medium-sized sweet potatoes, peeled and diced

  • 2 cups broccoli florets

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • Fresh lemon wedges for serving

Directions

  1. Preheat your oven to 400°F (200°C).

  2. Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt, pepper, smoked paprika, and dried thyme.

  3. In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, minced garlic, salt, and pepper. Spread them out on the baking sheet next to the salmon.

  4. Bake the salmon and sweet potatoes for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

  5. While the salmon and sweet potatoes are baking, steam the broccoli until tender-crisp, about 5-7 minutes.

  6. Once everything is cooked, assemble your plate with a salmon fillet, a serving of sweet potatoes, and a side of steamed broccoli.

  7. Drizzle the remaining olive oil over the salmon and vegetables and serve with fresh lemon wedges.
