Ingredients

  • 4 salmon fillets (wild-caught)

  • 1 cup quinoa (uncooked)

  • 2 cups broccoli florets

  • 2 tablespoons olive oil

  • 1 lemon (sliced)

  • 2 cloves garlic (minced)

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Fresh parsley (for garnish)

Directions

  1. Preheat the oven to 400°F (200°C).

  2. Rinse quinoa under cold water and cook according to package instructions.

  3. Place salmon fillets on a baking sheet lined with parchment paper.

  4. In a small bowl, mix olive oil, minced garlic, oregano, salt, and pepper. Brush the mixture over salmon fillets.

  5. Arrange lemon slices on top of the salmon and bake for 15-20 minutes or until salmon is cooked through.

  6. While the salmon is baking, steam broccoli until tender-crisp.

  7. Serve the baked salmon on a bed of cooked quinoa with steamed broccoli on the side.

  8. Garnish with fresh parsley and additional lemon slices if desired.
