Baked salmon with steamed broccoli and quinoa
Pair this delightful dish with a side of mixed greens or a refreshing cucumber salad for added fiber and flavor. A squeeze of lemon over the entire plate enhances the overall taste.
4 salmon fillets (wild-caught)
1 cup quinoa (uncooked)
2 cups broccoli florets
2 tablespoons olive oil
1 lemon (sliced)
2 cloves garlic (minced)
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley (for garnish)
Preheat the oven to 400°F (200°C).
Rinse quinoa under cold water and cook according to package instructions.
Place salmon fillets on a baking sheet lined with parchment paper.
In a small bowl, mix olive oil, minced garlic, oregano, salt, and pepper. Brush the mixture over salmon fillets.
Arrange lemon slices on top of the salmon and bake for 15-20 minutes or until salmon is cooked through.
While the salmon is baking, steam broccoli until tender-crisp.
Serve the baked salmon on a bed of cooked quinoa with steamed broccoli on the side.
Garnish with fresh parsley and additional lemon slices if desired.
