4 salmon fillets (wild-caught)
1 cup quinoa (uncooked)
2 cups fresh spinach, washed
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon lemon zest
2 tablespoons lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Directions
Preheat the oven to 375°F (190°C).
Rinse quinoa under cold water and cook it according to package instructions.
In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper to create a marinade for the salmon.
Place the salmon fillets in a baking dish and brush them with the prepared marinade. Let it sit for 10 minutes to allow the flavors to infuse.
Bake the salmon in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork.
While the salmon is baking, steam the fresh spinach until wilted.
Serve the baked salmon over a bed of cooked quinoa and steamed spinach.
