Ingredients

  • 4 salmon fillets (wild-caught)

  • 1 cup quinoa (uncooked)

  • 2 cups fresh spinach, washed

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon lemon zest

  • 2 tablespoons lemon juice

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).

  2. Rinse quinoa under cold water and cook it according to package instructions.

  3. In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper to create a marinade for the salmon.

  4. Place the salmon fillets in a baking dish and brush them with the prepared marinade. Let it sit for 10 minutes to allow the flavors to infuse.

  5. Bake the salmon in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork.

  6. While the salmon is baking, steam the fresh spinach until wilted.

  7. Serve the baked salmon over a bed of cooked quinoa and steamed spinach.
