Ingredients

  • 1/2 medium onion, chopped

  • 1/2 red bell pepper, chopped

  • 1/2 yellow bell pepper, chopped

  • 2 tsp olive oil

  • Additional olive oil for brushing parchment

  • 6 tbsp organic, salt-free broth of choice

  • 1 tbsp dried oregano

  • 2 tbsp parsley, finely chopped

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 4 halibut steaks (6 oz each, about 2" thick)

Directions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly brush the paper with olive oil to prevent sticking.

  2. In a skillet, heat 2 teaspoons of olive oil over medium heat. Add the chopped onion, red bell pepper, and yellow bell pepper. Sauté for about 5 minutes until the vegetables are softened.

  3. Spread the sautéed vegetables evenly on the prepared baking sheet.

  4. In a small bowl, mix together the salt, black pepper, dried oregano, and finely chopped parsley.

  5. Place the halibut steaks on top of the sautéed vegetables. Sprinkle the herb mixture evenly over the halibut steaks, pressing it gently into the fish to adhere.

  6. Pour the salt-free broth over the halibut and vegetables on the baking sheet.

  7. Bake the halibut in the preheated oven for about 15-20 minutes or until the fish is opaque and flakes easily with a fork.

  8. Once the halibut is cooked, remove it from the oven and let it rest for a couple of minutes before serving.

  9. Serve the baked halibut hot, along with the sautéed vegetables, and enjoy!
