Ingredients

Baked Cod:


  • 2 cod fillets (about 6 ounces each)

  • 1 tablespoon olive oil

  • 1 teaspoon lemon zest

  • 1 teaspoon chopped fresh thyme

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste


Sautéed Spinach:


  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 8 ounces fresh spinach leaves

  • Salt and pepper to taste

Directions

  1. Preheat your oven to 375°F (190°C).

  2. Place the cod fillets on a baking sheet lined with parchment paper.

  3. In a small bowl, mix together the olive oil, lemon zest, chopped thyme, garlic powder, onion powder, salt, and pepper.

  4. Brush the mixture evenly over the cod fillets, making sure they're well coated.

  5. Bake the cod in the preheated oven for about 15-18 minutes or until the fish is opaque and easily flakes with a fork.

  6. In a large skillet, heat the olive oil over medium heat.

  7. Add the minced garlic and sauté for about 30 seconds until fragrant.

  8. Add the fresh spinach to the skillet, and cook for 1-2 minutes, stirring occasionally, until the spinach wilts.

  9. Season with salt and pepper to taste.
