4 cod fillets (wild-caught)
2 cups mixed vegetables (broccoli, bell peppers, and cherry tomatoes)
1 cup wild rice (uncooked)
2 tablespoons olive oil
1 lemon (zested and juiced)
2 cloves garlic (minced)
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley for garnish
Directions
Preheat your oven to 400°F (200°C).
Cook wild rice according to package instructions, ensuring it's tender yet slightly firm.
In a bowl, mix olive oil, lemon zest, lemon juice, minced garlic, dried oregano, salt, and pepper to create a marinade.
Place cod fillets in a shallow dish and coat them with the marinade. Allow them to marinate for at least 15 minutes.
Arrange the marinated cod on a baking sheet lined with parchment paper.
Surround the cod with mixed vegetables, drizzling any remaining marinade over the vegetables.
Bake in the preheated oven for 15-20 minutes or until the cod is opaque and easily flakes with a fork.
