Ingredients

  • 4 cod fillets (wild-caught)

  • 2 cups mixed vegetables (broccoli, bell peppers, and cherry tomatoes)

  • 1 cup wild rice (uncooked)

  • 2 tablespoons olive oil

  • 1 lemon (zested and juiced)

  • 2 cloves garlic (minced)

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Fresh parsley for garnish

Directions

  1. Preheat your oven to 400°F (200°C).

  2. Cook wild rice according to package instructions, ensuring it's tender yet slightly firm.

  3. In a bowl, mix olive oil, lemon zest, lemon juice, minced garlic, dried oregano, salt, and pepper to create a marinade.

  4. Place cod fillets in a shallow dish and coat them with the marinade. Allow them to marinate for at least 15 minutes.

  5. Arrange the marinated cod on a baking sheet lined with parchment paper.

  6. Surround the cod with mixed vegetables, drizzling any remaining marinade over the vegetables.

  7. Bake in the preheated oven for 15-20 minutes or until the cod is opaque and easily flakes with a fork.

  8. Serve the baked cod on a bed of wild rice, garnished with fresh parsley.
